Sauerkraut And Music To Cook To. Saint Patty's Day. Recipe.




Since I'll be celebrating my Irish heritage all week because of Saint Patty's Day, I embraced my German background by eating German last night. The meal was pork, mashed potatoes and Sauerkraut. And applesauce.

And when I cook, sometimes I like to play the music of the region for which I'm cooking. Here are some standards I'll play from my Ipod:

German Food: Traditional German Music (I forget the name of the album but there's a lot of Polka).

Italian: The Essential Dean Martin.

Cajun: Buckwheat Zydeco

BBQ: Jimmy Buffet, Beach Boys, Springsteen. Usually just at the beginning of Spring when it's starting to get nice out because it reminds me of the shore.

And just writing this reminds me that I really need to start cooking more. I guess I've been in kind of a funk and haven't been cooking much lately but I really need to get back to it. Anyone have any great recipes they think I should cook?

I've been wanting to make the ultimate mac and cheese for a while. Anyone have the ultimate recipe? I'm also looking for a few good fish recipes. One of my favorite simple standard salmon dishes is this:

Salmon Ala' Dr Zibbs

- Rinse salmon and rub with olive oil. Add salt and pepper.
- Rub dijon mustard on top of salmon.
- Sprinkle brown sugar on top of salmon.
- Grill on cedar plank (soak the plank first in water)

We grill our fish with olive oil and a heavy sprinkling of Tony Chachere's cajun spice. Tony's makes everything taste just right.

PHD - thanks for reminding me. I revised the post to add olive oil.

And I agree with you on Tony Chacehre. I never tried his spice but I do have his cookbook.

can’t help with the fish..i'm a hippy vegetarian. I like my fish in my fish tank not my belly :)

Now are you actually Irish? My colleague and I were having a discussion yesterday about how Americans celebrate St Patrick’s and it’s especially a massive deal in NY as she’s there this week and finds is fascinating how the whole city goes Ireland mad and every single person claims to be Irish but really they only had one relative 40 times removed that had once been to Ireland many many centuries ago; so they're no more Irish than I am from the moon.

Miss H - I am mostly Irish:

Mom's side: 100 Percent Irish. Maiden name Kelly. Mulvey on Grandfather's Side.

Dad's side: his mom 100% Irish. His Dad was Irish with a bit of German. So I have a German last name but I'm mostly of Irish descent.

Most of my people came here in the mid - late 1800's. Dad's side worked in mines in Scranton PA. Mom's side worked farm then in Woolen Mills. (Chester and Montgomery Counties)

As for Saint Patty's over here - it's HUGE. I plan to leave work a bit early and go to an Irish bar in town for pints and to listen to Irish music.

..A few years back my Aunts went to visit the house where some of my ancestor's grew up. Some distant cousins still live there. It was in Cork.

Where I live St Paddy’s is big but only because we have the famous horse racing this week which always coincides with St Patrick’s and an all the Irish come over for the racing so it’s one big piss up in town and in the 1 Irish themed chain pub we have. The whole town is taken over by the Irish this week and everyone wears these stupid guiness hats

I can’t say I have a drop of Irish in me. I’m just boring English and Scottish and no-one wants to be either of us. We don't even celebrate our own saints days

Homemade mac and cheese is tough, because you don't always get enough cheese taste...

My Mac & Cheese recipe is super easy.

Boil water.
Follow directions on blue box...

Mmmmmm... Just like mom used to make!

(I lie, mom tended to use shells, Velveta, and milk, but that's not the joke.)

Here's one: melt butter in the bottom of a large pot. Add flour and brown it (be sure not to use icing sugar like I did. Whoops)
Now add 2 or 3 cans of evaporated milk (depending how many people you're feeding) and your macaroni noodles. Cook it for a bit until the noodles are kinda soft. Now add like a shitload of cheese. I used German Swiss, sharp cheddar and some mozza.
Stir it around until stuff is melty.
Pour it into a giant casserole dish.
Mix together melted butter, breadcrumbs and parmesan and put it on top. Bake it for a bit until it's brown and delicious.
Sorry for no quantities, I don't measure stuff usually.

I hate cooking. In fact, eating gets on my nerves too. Not the actual act of eating food itself - that's usually fun, especially when accompanied by a bottle of wine and good company - no my problem lies with needing to eat at all. It's so annoying to have to stop whatever I'm doing and shovel food in my face to make the hunger pains go away. Geez, it happens every couple of hours it seems! I wish we could just get our sustenance from sun and water like plants and food could be an option. Making dinner could be a hobby, like painting and therefore fun instead of a chore. Think of it! How freeing it would be not to have to constantly go to the grocery store and mess up pots and pans and dishes everyday. And no one would be fat or boring you with moaning about how they can't eat anything fun 'cause they are on a diet.

I do wish our creator had consulted me when designing the human body. I would have done my best to talk him out of the menstruation cycle as well!
